Breakfast Ice Cream

Breakfast ice cream is a fun way to pack some good nutrients into a quick and simple breakfast.

The start ingredient is ripe, frozen bananas. The riper the better. They make it so creamy, similar to the consistency of soft serve ice cream. I mean, look at how creamy that strawberry ice cream is!

The Happy Accicent

Breakfast ice cream was a happy accident for me. My kids asked for a smoothie for breakfast one day and the only fruit I happened to have that would have been good in the smoothie was frozen, so the smoothie was much thicker than normal. Instead of adding a bunch of extra water or milk to thin it out, I plopped it in a bowl and told them it was ice cream. After they got over the initial shock of the idea that I would be giving them ice cream for breakfast, they absolultely LOVED it and thought it was delicious. So, there you have it. Breakfast ice cream is essentially a smoothie that you can add (or hide) all sorts of healthy stuff into (if you want) and give it a fun name!

It was after that when I realized that other people make something similar and called it “nice” cream. So we serve both breakfast ice cream and nice cream in our home now.

I have the basic recipe below along with additional add-in options.

Breakfast Ice Cream

BASE RECIPE

Ingredients:

  • 2 cups frozen banana (about 2 medium bananas)
  • 1/4 cup milk

VANILLA

Add the below to the base recipe.

  • 1/2 teaspoon of vanilla extract

CHOCOLATE

Add the below to the base recipe.

  • 2 Tablespoons of cacao powder
  • 1/2 teaspoon of vanilla extract

PEANUT BUTTER CHOCOLATE

Add the below to the base recipe.

  • 1/2 cup peanut butter (or nut butter of choice)
  • 2 Tablespoons of cacao powder
  • 1/2 teaspoon of vanilla extract

PEANUT BUTTER

Add the below to the base recipe.

  • 1/2 cup peanut butter (or nut butter of choice)
  • 2 Tablespoons of PB Fit (optional, but adds more protein)
  • 1/2 teaspoon of vanilla extract

FRUITY

Add the below to the base recipe.

  • Swap one cup of the frozen banana for another frozen fruit of choice (we really love mango and strawberry)

MINT CHOCOLATE CHIP

Add the below to the base recipe.

  • 1-2 drops Peppermint essential oil (or 1/4 tsp peppermint extract)
  • 2 Tablespoons of cacao powder
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup semi-sweet or dark chocolate chips (to stir in after blending)

Get creative! When I want to pack extra nutrients into the breakfast ice cream, I will add things like greek yoguart, chia seeds, hemp hearts, flax seed, protein powder, PB Fit powder, or greens powder.

You can also have fun with it and add things like chocolate chips, marshmallows, nuts, or chopped fruit after blending the ice cream.
