Protein Granola

If there’s one thing I love for breakfast in the morning, it’s a big bowl of my homemade greek yogurt, topped with berries and the crunch of this unbelieveably delicious granola. It’s got the perfect crunch and the perfect balance of sweetness.

I also enjoy eating it by itself, topped with some milk as an after dinner snack, or even sprinkled on top of oatmeal. It’s just so dang good! And the added benefit is that this granola has 10 grams of protein per serving!

Protein Granola
Ingredients:
  • 2 cups rolled oats (I use these)
  • 1 cup raw nuts/seeds (I prefer almonds or pecans)
  • 1/2 cup plant-based protein powder (I use doTERRA vegan or vanilla)
  • 1/2 cup pure maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup melted coconut oil
  • 1 egg white
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
Instructions:

Preheat oven to 300ºF.
Add all ingredeints into a large bowl and mix until well incorporated.
Line a baking sheet with parchment paper and spread granola mixture onto the sheet, pressing down with a spatula. (I like to divide the mixture into 2 separate sections to allow more airflow through the middle.)
Bake for 40-45 minutes. Do not stir halfway through baking.
Let the granola cool completely on the pan before breaking into smaller pieces.
Store in an airtight container.
